Shamrock Smoothie

I’ve spent way too much time on Pinterest this week. Besides feeling like I need to redecorate our bedroom, organize the kitchen shelves and buy a new Spring wardrobe – I was also bombarded with pictures of all things mint-chocolate (Thin Mints!). Besides Lucky Charms Treats (which I shared earlier this week), one of my favorite guilty pleasures of St. Patrick’s Day is the Shamrock Shakes that appear. Like, everywhere.  So I did what any Pinterest-obsessed person would do. I jumped into my car and drove to the grocery store. Because, why buy 1 shake from your local fast food restaurant when you can buy enough ingredients to make shakes all week long? We’re on the same page here, right?

Shamrock Smoothie

So there I was in the grocery store, picking out ingredients for my Shamrock Shake: fresh mint, peppermint extract, chocolate chips and chocolate syrup. Unfortunately I got all the way back home before I realized I forgot the most important part: ice cream. Oi.

Sometimes a girl has got to make do with what she got. And this girl had greek yogurt. And spinach. Now before you start judging me for leading you on with the milkshake talk and then dropping the s word on you (spinach, duh), let me just say this: holy shamrock this smoothie is good! And totally less guilt. The trick is that you don’t actually taste the spinach… but it adds the green color that’s a must in chocolate-mint shakes.

Give it a whirl. This recipe serves 2. Or 1 very hungry Irishman.

Ingredients
2 frozen bananas (medium)
1 large handful of spinach
1/2 cup of milk (I used hemp)
1/2 cup plain greek yogurt
1/8 tsp peppermint extract
2 T chocolate chips
Chocolate syrup
Fresh mint
Instructions
In a blender, pulse together bananas, spinach, milk and yogurt until spinach is fairly well combined (and there aren’t large green chunks). Add the peppermint extract and chocolate chips, and pulse for a few more seconds, keeping chocolate chips chunky (not fully blended).
Pour smoothie into a cup, and top with chocolate syrup and fresh mint. Enjoy!
